Originally, Roedjak is a side dish of fruit topped with a sweet sambal sauce. Prepared in this way it is called roedjak manis (sweet). Later, the roedjak sauce was used for meat, chicken, fish, eggs and tofu/tempeh.

The ingredients in the Kokki Djawa Boemboe (spice mix) Roedjak: sambal, onions, sugar and soy sauce are ideal for, for example, braising beef for a long time. The sambal, onions and sugar mixed with herbs create a thick sauce that is also delicious with chicken, fish or vegetarian dishes.
